If I'm reading it right, the odds with no modifiers are 15% bite, 20% laceration, 50% scratch, 15% no sale. Modifiers include skill with an equipped melee weapon, whether and how many zombies count as surrounding (and rear vulnerability level), thick/thin skin, and whether the zombie is flagged as "inactive" or not (not sure exactly what that represents).
